The young leaves (harvested until the end of April) are healthy and edible. They taste good in soups, in salads, as a spinach alternative or as a tea infusion. The flowers can be used to make maple syrup. Maple has anti-inflammatory, fever-reducing and blood pressure-lowering properties.
Fresh leaves can be applied directly to insect bites or bruises to provide relief.
